We are looking for somewhere warm at this time of the year, location is not important but NON tourist
destinations and sea kayaks (not plastic shells) venues

I've looked into sea kayaking trips off the south shore of Cuba and Belize, but never ended up booking anything. They tend to go in small groups with a guide - safety in numbers out on the ocean, and all that. I don't have the links anymore, but Google should be able to point you in the right direction.
I've been several places in Central America where you can rent proper sea kayaks and go paddling all day around conservation areas. It's not a full-on kayak vacation, but it's fun. I find the farther you get away from all-inclusive drinking holiday areas, the more likely you are to find proper camping, kayaking, and hiking opportunities.
