Cut pockets in chicken breasts and fill the pockets with the creamed cheese mixture, secure with tooth picks pop (or wrap in baking paper) in the oven and drizzle with fresh Virgin Olive Oil and bake untill cooked....these are 100% guaranteed to be so damn yummy! I serve them with chunky potato wedges which I pat dry once peeled and then roll them in tumeric and chopped Thyme, once again drizzle with Pure Virgin Olive Oil and bake till crispy/
It's making my mouth water just reading that recipe. If I'm ever in Australia, My first meal would have to be at your house.

I often cook far more potatoes than needed, so as to have some left over for the next day. I love mashed potato mixed with other things and fried up for breakfast. I do them like nice crispy pancakes with onion, chopped tomato, and cheese.
