Overnight Bacon and Egg Casserole

Ingredients
6 strips Bacon
6 Eggs, lightly beaten
3 C. 2% Milk
Sea Salt, to taste
Ground Black Pepper, to taste
6 C. French Bread, cubed
2 C. Shredded Colby and Monterey Jack Cheese

Directions
1. Grease a 9x13" baking dish with nonstick cooking spray. Place the bacon on a microwaveable plate and warm for 1 minute until crispy. Crumble and set aside. In a large mixing bowl, whisk together the eggs and milk. Stir in salt and pepper as needed to taste. Add the French bread cubes, cheese, and bacon, and stir to combine. Pour the mixture into the prepared baking dish. Cover dish with plastic wrap and refrigerate overnight. Preheat oven to 350 degrees. Bake casserole for about 1 hour, or until a toothpick inserted in the center of the casserole comes out clean.
