Peeling Potatos for French Fries

I am getting ready to fry up some catfish & French fries. While cutting up the potato's, I got to wondering, who all peels their potatoes first? Considering that 98% of the vitamins in a potato are in the peel, why cut it off to fry them up? When I found this out several decades ago, I quit peeling my potatoes before cutting them into fries. I give them a good wash & scrub first, then slice them up. If you eat baked or boiled potatoes then you are eating the skin or eating AROUND it . If you eat the skin on those types of cooked potatoes, why not the fried ones? It seem like a waste of time, effort, & vitamins to peel them first before making French fries.

Although frying probably is hot enough to destroy vitamins I do like deep fried potato wedges which are always done with the skins on.
